Another week and another cookie. I think I posted these cookies before, so bear with me! The first time I made these cookies was because I had a bag of chips and I didn't want to nibble on them so I thought if I put them into cookies it would save me some calories. Well I was wrong! Instead of the chips, I ate cookies! They are good--tender but crisp!

Potato Chip Cookies

1 cup butter----room temp

1/2 cup sugar

1 tsp vanilla

2 cups flour

1/2 cups finely crushed potato chips

1/2 cup finely ground pecans

Cream butter and sugar till fluffy. Add vanilla. Add flour, pecans and chips and mix. Shape into i inch balls and place on parchment paper lined baking sheet. Flatten slightly with glass dipped into sugar. Bake 350 degrees for 10-11 mins.
